Scrambled eggs with mayonnaise is a little indulgence I have. I usually like my eggs sunny side up, but there are times when I just have a craving for this little dish. My husband’s a big fan of scrambled eggs, so I surprised him with my ‘mayofied’ scrambled eggs. Doesn’t it look pretty?
A little mayo adds a ton of flavor to scrambled eggs.
How to make scrambled eggs with mayonnaise: In a bowl, whip 3 eggs with a fork. Add a spoonful of mayonnaise, salt and pepper to taste. Then fry in a hot pan. Done!
Unfortunately, my husband didn’t even want to taste them. The thought of the eggs having mayonnaise in them made him cringe. I was like “C’mon! You eat potato salad and that has mayonnaise! Macaroni salad has mayonnaise!” But nope. No way. Mayonnaise and scrambled eggs do not coexist in his world. I was a little upset he didn’t even want to give it even one teeny tiny taste. Oh well. No more egg-mayo surprises for him next time.

Yay! I’m so happy to know I’m not that weird after all! hahaha! I love scrambled eggs with mayonnaise! Unfortunately, no one else in my family does. Oh well, as you say, more for me!

Oh wow. It’s almost natural for me to think egg + mayo. My husband likes it too. My dad too. => What brand of mayo do you usually use Toni? My husband and I don’t agree on a single mayo brand…that’s the complexity. =>

I say to each his own, Toni. My husband likes his scrambled egg soft and plain and fluffy. I like sunny side egg with crisp, slightly burned whites. My daughter likes her sunny side up all smooth-looking as if done over at McDo’s. My second son likes soft-boiled egg (I just bury an egg into the the pot of rice as soon as the rice cooker turns from “cook” to “keep warm”). My youngest son (thank God, we only have 3 kids, lol) likes his scrambled eggs a little on the salty side. And so it happens that breakfasts see us getting our own versions of eggylicious.

Though some people might not consider it “mayonnaise” per se, I use Miracle Whip in my scrambled eggs (and most other recipes that call for mayo too). Miracle Whip gives food that certain “twang” that I’ve never gotten with any regular mayonnaise.
