Ponkan Tomato Caprese with Crispy Tuyo and Kesong Puti
This refreshing appetizer was served during a holiday party at M Cafe. It was reminiscent of Insalata Caprese — sliced tomatoes, mozzarella cheese, basil leaves drizzled with olive oil. While I still prefer the classic Italian version, this M Cafe appetizer had a refreshing taste all its own. The ponkan added a zestiness to the the cheese and tomato, while the crispy tuyo gave it a tiny kick. Interesting flavors.

And what sort of tuyo did they use? Plain fried or the kind bottled in oil with garlic & vinegar? (Hehe, dami bang tanong? Oo, alam mo na binabalak ko ;P)
