Piping hot? With a little pat of butter slowly, seductively melting its way into delicious oblivion?
Showered with grated coconut? Bursting with salted eggs?
Topped with quezo de bola shavings and slices? Or would you prefer goat cheese?
Sprinkled with sugar? The top slightly caramelized?
Ah, bibingka. Definitely one of my favorite Pinoy snacks.

I like my IDEAL bibingka —
1. cooked medium-well, meaning — cooked slowly somewhere between 165-175°F or 65-75°C. I would prefer it cooked the old-fashioned way in a clay pot over steaming chunks of burning coal, but in these modern times, the oven would suffice.
2. cooked with red eggs, and with the galapong made from organic glutinous rice. The banana leaves used must be from the inner and higher part of the banana tree to ensure it is clean and young.
3. served warm, and not too well-done with little traces of burned edges (may cause cancer! LOL).
4. served with a copious avalanche of finely grated coconut, with traces of melted butter, and a very light sprinkle of brown sugar.
5. served with quick-melt cheese. Goat-cheese would be a luxury.
Eating it with a hot cup of white tea would make the meal more superb and the experience more complete.

Sobrang dami kasing masasarap at nakakamiss na na food to eat them all at a very short while. I like my bibingka with lots of cheese on top and melted butter plus itlog na maalat, yum!!!

1. soak rice in water for half a day. mix coconut milk and and young coconut meat with ground rice.
2. grind soaked rice in a stone mill.
3. prepare slices of young coconut meat.
4. grate ripe coconut.
5. squeeze milk out of grated coconuts
6. mix grated coconut with water.
7. place mixture in tin containers.
haha!! im sorry it’s a wrong procedure:)
