Queso de Bola is one of the good foodie things about the holidays. But what happens when the holidays are over and there’s still so much cheese left over? You think of other ways to enjoy it aside from its regular sliced version. We didn’t want the cheese to go to waste so we enjoyed it as much as we could.
1. Queso de Bola Sticks. Instead of it sliced crosswise as shown in the picture, slice them lengthwise, in strips. Like french fries. They made for great nibbles while we watched TV.
2. Olive and caper appetizers. Cubed queso de bola speared on a toothpick with olives or capers. It made for great pica-pica during our New Year’s Eve dinner. H munched on them while I was still preparing our pasta.
3. Fruit bowl with cubed queso de bola. Every night, H and I have a bowl of fruits each. I tried throwing in some of the diced cheese. Yum! I have my fruit bowl with yogurt and honey, and the cheese added a saltiness that complemented the sweetness of our healthy snack.
4. Egg in a hole with grated queso de bola. This one’s my fave! In a pan, melt a pat of butter. While that’s melting, grab a slice of bread. Fold it in half and bite the middle, so there’s a little hole at the center. Now place it on the pan till toasted. Flip over. Crack an egg in the hole. Top with grated queso de bola. You can flip it over again if you like your egg over-easy. If you’re making this for others, use a knife to make the hole of course!
You can enjoy the examples using regular cheese too. I just had to deal with leftover queso de bola. Mission accomplished! We’ve polished it off and won’t be tasting another queso de bola till Christmas 2009. Haha!
What do you do with leftover queso de bola? Or what do you think can be done with it? Share your recipes and ideas!

January 6, 2009 at 2:22 pm (15 years ago)We don’t have Queso de Bola in K-kun’s household. Seriously, they don’t celebrate Christmas traditionally here (they don’t have Noche Buena,) must be because Christmas day is also his Dad’s birthday so they just celebrate it on the day itself. Anyway, when I was still living with my father, where we have Noche Buena, we would use cheese cubes with cocktail hotdogs. Or we just munch on the slices. We also mix some into our fruit salad.

or kaya I ask my mom to make biko (sinaing na malagkit) when it’s cook, I drizzle some brown sugar and grate some QDB on top. One of my favorite ito
lastly, I fancied to make ensaymada topped with grated queso de boloa. Sana magawa ko before Christmas 2009 hehehe.

we don’t have queso de bola here, but we always have cheese anyway, everyday of our life. it’s one of the three things that the dutch can’t live without – cheese, bread and milk.
i used to make a hole in the bread too, using a drinking glass to punch the hole. but i have never tried grated cheese on top of the egg! great idea! i will try it now! *grin*

January 7, 2009 at 12:04 am (15 years ago)Thanks for sharing these great ideas. We’ll try some of it.
Queso de bola’s (the Marca Pina one) taste is so close to parmesan, so it always ends up grated on our pastas. My wife and I call it the “cheap” substitute to parmesan.

January 7, 2009 at 8:56 am (15 years ago)try using queso de bola for grilled cheese sandwich. my son loves queso de bola when it’s grilled because it becomes sticky like mozarella. i also tried using it for cheese lumpia, together with a strip of bell pepper and eggplant.

June 14, 2011 at 3:11 am (13 years ago)My family is from the Yucatán – there we enjoy quasi de bola (marca El Gallo Azul) with slices of guava paste. The sweet and salty combination is perfect. The servings are small and work well when you have already eaten a full meal and don’t want a full-sized dessert.
