Ice cream sandwiched in rosquillo biscuits? It is love, love, love.
I got this idea from my sister. Just scoop a spoonful of your favorite ice cream on one biscuit, and use another biscuit to create a sandwich. It’s really good.
I love rosquillos biscuits. They’re crunchy, a little sweet and addicting. Gah.
Don’t they look like happy clams?
Of course, this is one messy treat! Since the biscuits have holes and the ice cream melts quickly, you’re sure to get ice cream dribbling down your fingers. That’s not such a bad thing really.
I had mine with Belgian Chocolate Ice Cream. How indulgent! Next on my list: Mango Ice Cream Rosquillo Biscuit Sandwiches! It’ll be a spin-off of my all time favorite ice cream sandwich: mango ice cream in pan de sal.
