Ambrosia Cake

Patti's Ambrosia Cake

My sister P made this birthday cake for me and my Mom. It’s an Ambrosia Cake and it tasted very, very, very good. When my Mom told me sisterette was preparing an Ambrosia cake, I thought “Ambrosia? Coconut? Yikes.” I was never a fan of coconut mixed in baked goods (for example, I don’t like macaroons).

P’s Ambrosia Cake made me a convert though. Her cake was light and very refreshing. The cake was fluffy. The custard in between layers was creamy and was spiked with a zesty orange flavor. She covered the cake with frosting and lightly toasted coconut flakes.

It was perfect for that warm and breezy birthday afternoon.

Inside the Ambrosia Cake
May I have another slice?

P likes to keep a lot of things secret, so I’m sure her recipe to this perfect Ambrosia Cake is a secret too. Here are three links to Ambrosia Cake recipes though, in case you’d like to give this fantastic cake a try:

Ambrosia Angel Food Cake from About’s Southern Food Cuisine
Ambrosia Cake from All Recipes
Ambrosia Cake from Back of the Box Recipes

It’s a wonderful complement to a breezy afternoon. Fantastic. I couldn’t have asked for a better birthday cake. Thanks P!

P.S. It’s her birthday tomorrow too! I wish I could bake you a cake, P, but you know how impatient I am with baking. So, iba nalang gift ko sa ‘yo. Mwah! Happy Birthday!

i’m not a fan of coconut-based pastries too, but this one looks really yummy! esp. with the orange zest.
another guilty pleasure — raffaello, those coconut-sprinkled white-chocolate with almonds of ferrero, grabe! once you open the box, you can’t stop hahaha!
