There’s this beach market in Malatapay a ways from Dumaguete, where they bring in fresh catch and you buy whichever one you want and you can have it either grilled or “sugba”, as “tola” or tinola or as “kilaw” or ceviche – or all of them if you want! The term “sutokil” is a combination of the first syllables of these choices. Ah,I miss home!
