    easy peasy!

    1. Fruit cocktail custard tart. little tart shells, filled with fruit cocktail and custard, topped with freshly whipped cream.

or for the health consious option:

    2. Fruit Cocktail ricotta Cannoli. buy fresh cannoli shells, mix fresh ricotta with the fruit cocktail, fill the shells, sprinkle with some icing sugar and serve. i love cannoli shells with both ends dipped in chocolate – tapos it gets hard.

fruit and chocolate! how can you go wrong? :)

    my sister’s “ice box cake”

    1. drain fruit cocktail in a strainer. then add sour cream, condensed milk, cream cheese and if you want some more extra fresh fruit like mangoes, strawberries etc.
    2. in a serving dish, layer lady fingers (broas) then pour a scoop of the fruit mixture then repeat the steps alternating the lady fingers and mixture
    3. leave in freezer for about an hour. voila, instant fruit salad cake!

hmmm, i just eat it off the can. maybe after getting comments from other readers i’d have more creativity in preparing something with it being the main ingredient.

    Fruit Salad! Yum!

    Receipe:

    Fruit Salad:

    Ingredients:

    2 cans Pineapple chunks, drained
    2 cans Fruit Cocktail, drained
    Bananas, sliced
    Apples, sliced
    Grapes
    Fresh Strawberries (sliced)
    Peaches (sliced)
    Nectarines orange sections
    Any Seasonal Favorite Fruits
    Raisin (optional)

    Dressing:
1 cup Pineapple Juice (juice from Pineapple chunk)
    2/3 cup Sugar
    2 tablespoon Flour
    2 eggs, slightly beaten
    3 tablespoon Lemon Juice
    1/4 cup Orange Juice
    1 tablespoon Butter
1 cup Heavy cream (Nestle Cream)

    Instruction:

Mix sugar, flour, eggs, orange juice, lemon juice and butter and pineapple juice. Heat mixture in double boiler until thick. (Cook dressing carefully in low heat if using saucepan as it will scorch easily.) Bring to a boil, stirring constantly. Boil for 1 minute. Remove from heat and let cool. Add heavy cream until desired consistency is achieved. Chill dressing overnight. Prepare fruits and place in a bowl. Pour dressing over prepared fruit in bowl, mix gently and serve.

Okay, I did it and it turned out very well. I’ll upload the results and photo on my blog tomorrow (because Cathy borrowed my USB today, haha). Meanwhile, here’s my entry to your little Iron Chef shindig:

    GANNS’ EAT-SOME SWEET HUM
(Yes, I want a cute recipe name.)

    Ingredients:
5 slices of CDO Cooked Ham
2 small cans of Del Monte Fruit Cocktail (Lychee Flavor, mmm)
    1 teaspoon of sugar
    Salt and pepper to taste

    Directions:
    1. Bring the syrup of the two cans of Del Monte to a boil in a medium saucepan.
    2. Put the ham in, and cook until almost all syrup is gone.
    3. Empty the fruits into the saucepan. Place one teaspoon of sugar in one of the empty cans of fruit cocktail and half-fill it with water.
    4. Empty the can into the saucepan and cook for five minutes or until syrup thickens slightly.
    5. Plate the ham. Spoon the fruits onto the ham or on the side.
    6. Drizzle the syrup onto the ham and fruits and serve immediately.
