My Go-To Comfort Food: One Pot Pasta

Last Friday, I had one of the most tiring days I ever had. I accompanied my child on his field trip and it was 2 HOURS of non-stop play! It was so much fun but also quite exhausting. When my husband picked us up from school, we headed straight for the supermarket where I could buy ingredients for much-needed comfort food. I wanted something tomatoey. I needed something basil-y. I needed something gooey. I need something quick to make! One pot pasta it was.

One Pot Pasta is my go to for quick comfort fixes. I didn’t even bother changing out of my field trip clothes when I headed to the kitchen to cook this dish. I needed it ASAP!!! In a big pot, I put in 5 cups of water and let it boil. While I was waiting for it to boil, I quartered 6 tomatoes, washed the basil leaves, sliced some cheese, roughly chopped garlic and sliced a white onion. When the water was boiling, I slid in a handful of angel hair pasta and the rest of the ingredients I had prepped. Then I put in one beef bouillon cube, and about 1/2 cup of tomato paste. Seasoned it with salt and mmmmm, the dish was smelling good. After 12 minutes, it was ready. I just let it sit some more so more of the water would evaporate. The bad thing was the angel hair became a little mushy (since it cooks pretty quickly) but overall, it was a dish that was verrrrrry comforting.

That was my late post-field trip lunch. I had it again with a glass of red wine for a pre-midnight snack that same day.

I highly recommend this if you’re looking for a dish that seems to say “There, there, everything will be okay.” I totally got that comfort with this dish — easily I may add, as it was a cinch to prep and cook. Mmmmmm.
