How to Cook One Pot Lasagna

Lasagna. Who doesn’t love lasagna?! It’s hands down one of my most favorite pasta dishes ever. On my birthday, I decided to stay home. There was an option to have food delivered or to eat out, but I was craving, craving, craving home-cooked food. I was also craving lasagna. Here’s the thing though — I’m not very fond of using our oven, and a typical lasagna requires baking. As a believer of one-pot meals, I knew that one pot lasagna can be achieved!!! And yup, it was an achievement unlocked indeed. Here’s what you’ll need for a quick and easy, one-pot lasagna.

One Pot Lasagna (Recipe)

Ingredients:

  • 16 slices of prima sorpresa (salami), sliced into quarters – you can also substitute with the same amount of crumbled Italian sausage or ground beef
  • 250 grams (8 oz) of lasagna pasta, uncooked
  • 2 cups tomatoes, quartered
  • 250 grams (8 oz) tomato sauce
  • 3 cups water
  • 5 cloves garlic, minced
  • 1 cup basil leaves
  • 1 teaspoon oregano powder (or fresh oregano)
  • 2 tablespoons olive oil
  • 1/2 cup mozzarella cheese
  • 1/2 cup ricotta cheese

Procedure:

  • In a large heated pot, heat the olive oil. Slide in the meat and fry till almost crispy.
  • Stir in the garlic, tomatoes, and basil. When mixed together, stir in the tomato sauce and oregano. Season with salt and pepper.
  • Slide in the lasagna noodles. If it doesn’t fit, you can break it in half. Pour in the water. Bring to a boil, then let simmer till the pasta cooks through, about 18-20 minutes.
  • Let it simmer till the sauce is reduced to your liking. Lower the heat and stir in the mozzarella cheese. You can opt to make your lasagna even cheesier at this point! Stir in whatever cheese you think will work here.

  • When the cheese has melted, take the pot off the burner. Top with spoonfuls of ricotta cheese while the lasagna is still hot.

Yield: 6-8 servings

I loved this dish. The Primo Sorpresa was spicy, so it added a lot of heat to the dish. I loved the kick it gave!

This was a very easy dish to make. Prep time was about 10 minutes, and total cooking time was 30 minutes.

As for family feedback, it was very encouraging! My Mom had seconds right away. Though she and my husband did say this dish could use a lot more cheese. (Hence the previous tip about you opting to add more cheese to this dish!)

I had a warm bowl of this one pot lasagna on a gray birthday afternoon. It totally hit the spot. (Garfield, you would’ve been proud.)
