Summer snack: Ube Ice Cream with Rice Krispies

A summer snack should be cold and refreshing. One of our favorite go-to summer snacks is ice cream! But not just any ice cream. It has to be not-so-sweet, creamy, and has to have a crunch to it. An ice cream with crunch? Well, you gotta go provide your own crunch.

The Birth of Our Fave Summer Snack

It was super hot one afternoon. I wanted to enjoy some ice cream with Timmy. Upon opening the freezer, there was no chocolate ice cream! Uh oh! Timmy enjoys nothing but chocolate ice cream. But hey, call an ice cream by color and he’s suddenly interested.

Me: “Timmy, do you want to try purple ice cream?”
Timmy: (Pauses) (Thinks) “YES!”

Yey! The texture of ube ice cream is pretty grainy, which adds to its deliciousness. But we wanted a little crunch, so thank goodness for Timmy’s fave cereal: Rice Krispies!

Me: “Timmy, do you want to eat Rice Krispies with your purple ice cream?”
Timmy: (Pauses) (Thinks) “YES!”

This is our SUPER FAVORITE SUMMER SNACK now! We love it. One afternoon, Timmy approached me and said, “Mommy! Eat purple ice cream with Rice Krispies please!” Yey. Ube ice cream is now a staple in our freezer.

You can try it with other flavors too. But make sure there’s ube! I tried it with Kesong Puti ice cream AND Ube ice cream. It was wonderful.

    Stocked up on popsicles at home. The sweet corn pinipig crunch is quite good. Outside, I rely on sago’t gulaman or mais con hielo to cool me down after traveling around lunchtime when the heat is at its peak. I also take advantage of discounts on group buying sites on smoothies, milk teas, etc.

    I thought this was a post on how to just put the snack together. I love how you told the story behind it! My son is a sucker for mango smoothies.
