Saladicious!

Mozzarella, Tomato and Basil Salad

In a bowl, toss together a bunch of torn-up basil leaves, sliced tomatoes and diced mozzarella. Pour in some extra-virgin olive oil. Add some walnuts too!

This was last night’s dinner since I’m challenging myself to shed a few pounds. Easy to make, yummy and filling!

P.S. I’m in a better mood now. Yes, it was the PMS mood a-swingin’!

    MEC: You can have some wheat bread to go with it so you won’t get hungry easily!
