Want a quick and easy breakfast? Try this quick and easy Eggs Florentine recipe! It takes only 10 minutes to prep and cook everything. Really! It’ll take even less than that for the whole family to gobble this dish down. 😉

Quick and Easy Eggs Florentine
{SUPER easy peasy breakfast!}

What you’ll need:

2 Tbsp. Olive Oil
1 Onion, chopped
1 Garlic, minced
3 slices bacon, diced
1 pack of spinach (about 5 oz.)
2 eggs
Salt and Pepper
Parmesan Cheese

Here are the detailed steps:
1. Pour olive oil on a heated pan.
2. Saute bacon in olive oil till almost crisp.
3. Slide in onions and saute til wilted.
4. Saute garlic. Don’t let it brown
5. Add spinach and cook till wilted, about 2 minutes.
6. Crack 2 eggs over the spinach, season with salt and pepper. Cover to let steam cook the eggs.
7. Sprinkle with Parmesan cheese before serving.

Eggs Florentine is great for breakfast! You can also have it for lunch or dinner, but kicking the day off with this dish is super awesome. It’s a refreshing twist to our favorite Spinach Omelet at home. :)

My husband is super health-conscious, so instead of bacon we used tuna flakes. It’s just as delicious!

    I love this sort of egg dish for breakfast…I think it would be great with smoked salmon!

    I have the same over-the-sink strainer :)

    My family is not so familiar with spinach yet, I think it’s time we have spinach at home and what better way to start with this delish recipe 😀
