Recipe for Poached Eggs in Tomato Sauce

The last time I prepared this dish, I tried canned tomatoes with mixed herbs. It was okay, but I preferred having a can of plain diced tomatoes (no added herbs) and just stir in the dried herbs myself. For this particular preparation, I used the same recipe except I used two cans of diced tomatoes and three eggs. More servings for more people! We had an impromptu family gathering at home, and this dish was quick to prepare and serve.

Poached Eggs in Tomato Sauce

Step 1: Heat oil in a pan. Saute one diced onion till transparent. Throw in some chopped garlic. Don’t let them turn golden brown though!

Step 2: Pour in one can of diced tomatoes. Season according to taste. You can mix whatever herbs or ingredients you want. For a Mexican feel, stir in some pinto beans. For a spicier vibe, stir in chili, coriander and cumin. We kept it simple with basil, salt, pepper and sugar. Taste your sauce until you get the flavors you love! You can also opt to buy canned tomatoes with herbs. I’d recommend you get the plain ol’ diced tomatoes and add the herbs yourself.

*We used two cans today because there were 12 of us at the table.

Step 3: When you’re happy with how your sauce tastes, make two holes in the sauce. Slide two eggs in. Let the sauce simmer around it. You can cover the pan to help poach the eggs. Add more eggs if you’d like!

Step 4: You’re done! Bring the pan over to the dining table — that’s your serving dish already! Enjoy the hot dish with sliced bread.

Today we experienced that Poached Eggs in Tomato Sauce is a great partner with Baked Macaroni & Cheese, Steamed Broccoli and Torikatsu. Burp! To scoop this dish, by the way, we used Melba Toast which I got from Sugarhouse:

    i was craving for huevos rancheros and when i saw your first post on this, i thought might as well do it this way. i put cheese on top too =).
