Recipe: Poached Eggs in Tomato Sauce

This is a super easy recipe and a definite crowd-pleaser. Another thing I love about this dish: You can eat it straight from the pan! It makes for a great brunch or a light dinner. Here’s how to make it:

Sauteeing Onions and Some Garlic.

Step 1: Heat oil in a pan. Saute one diced onion till transparent. Throw in some chopped garlic. Don’t let them turn golden brown though!

Stirring in the Diced Tomatoes.

Step 2: Pour in one can of diced tomatoes. Season according to taste. This is where it gets interesting! You can mix whatever herbs or ingredients you want. For a Mexican feel, stir in some pinto beans. For a spicier vibe, stir in chili, coriander and cumin. We kept it simple with basil, salt, pepper and sugar. Taste your sauce until you get the flavors you love!

Step 3: When you’re happy with how your sauce tastes, make two holes in the sauce. Slide two eggs in. Let the sauce simmer around it. You can cover the pan to help poach the eggs.

Step 4: You’re done! Bring the pan over to the dining table — that’s your serving dish already! Enjoy the hot dish with sliced bread.

Dip bread into the runny egg.

Use your sliced bread as a spoon. Dip it into the runny egg, swirl around in the tomato sauce and pop a bite in your mouth. It’s really delicious!

Eating straight from the pan.

The whole family feasted on this dish. I got to enjoy the last bits too. I broke off a piece of bread and used it to wipe off the remaining eggs and tomato sauce. Oh yummeh!

    it’s takes basic cooking skills and it’s cool to look at! i’ll get this done this week (fingers crossed) and see how it goes! my tummy might protest if this is all i’m having for dinner. might be good for the figure, though. :)

      Hi Bursky! You can use pasta to make the dish more filling! Cook the noodles while the tomato sauce is simmering and you’re about to poach the eggs. Transfer the cooked pasta into a serving platter, then slide this poached eggs in tomato sauce over it.

      Or if you want things easy breezy like me, put your pasta in your own dish, then just spoon the poached eggs in tomato sauce over it. Yumminess!

    Hmmm… Interesting! Will try this out soon. I’m a huge fan of canned tomatoes na rin eh. Better than buying the fresh ones, keeping them in the fridge, and ultimately, uhm… forgetting about them. Hehe
