Bread Pudding

I prepared this pudding for New Year’s Eve AND New Year’s Day. Everyone loved it. Yes! That’s one more thing to add to my growing list of specialty dishes. The truth is, there’s nothing special about the recipe or the ingredients. This is a very simple dish to prepare. No expertise needed! The smell of cinnamon while baking makes your home feel all warm and cozy.

This recipe serves 5. You’ll need:
3 slices of day old bread
2 1/2 teaspoons of melted butter
3 1/2 tablespoons of raisins
2 eggs, beaten
3/4 cup milk
1/4c white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Here’s what you’ll do:
1. Preheat your oven.
2. Grab a baking pan. Tear the bread up into little pieces and scatter it on the pan.
3. Drizzle the melted butter over the bread.
4. Shower the bread with raisins.
5. In a bowl, mix the remaining ingredients together.
6. Pour the wet mixture over the bread. Make sure all the bread is coated. You may need to press some pieces of bread down so they can absorb the egg mix.
7. Place the pudding in the oven and bake for an hour at 275 degrees. Since my little oven only goes up to 275 degrees, that’s how long I bake it for. If your oven goes up to 300 degrees, 45 minutes will do.
8. When done, let cool just a wee bit. This is best eaten warm.

Just about 20 minutes or so into baking, the scent of cinnamon and vanilla will waft through the air. It will tease and comfort you at the same time. Once you take a bite into the freshly baked pudding, the warmth will make your toes tingle. Serve as a dessert or as an afternoon snack.
