Whenever I’d come home from a trip abroad, this would be one of my immediate requests. “Mama, I want Sinigang when I come home ha.” Or when I’m feeling really down at work, I’d rush over to the food court and get myself a bowl of Sinigang. I’d feel significantly better afterwards.

I like the kick of Sinigang. A warm bowl of Sinigang comforts me heart and soul, then kicks my senses up a wee bit with that delicate sourness. I love munching on the kangkong, tomatoes and onions, feeling little bits of gabi melt in my mouth, nibbling on the pork ribs, mixing a bit of rice in my soup and being delighted with this hearty spoonful… ah, Sinigang na Baboy is one of the best Pinoy dishes ever.

I finally learned to cook the dish last weekend. I did cook Sinigang na Hipon before but iba pa rin ang Sinigang na Baboy. It’s a fairly easy dish to prepare that yields magnificent results. Here’s what I did:

1. I simmered the pork meat/ribs in pork broth for about an hour and a half. You can simmer the meat in plain water but the broth makes the dish even more flavorful.
2. When the meat is tender, slide in the chunks of gabi, sliced onions and sliced tomatoes.
3. Stir in a packet of Sinigang mix. I used (and recommend) Knorr Sinigang sa Sampaloc with Gabi.
4. 5 minutes before serving, slide in the sliced kangkong.

Serve steaming hot with rice.

Sinigang is best enjoyed with family and good conversations as I did last weekend. I enjoyed watching my family sip on the soup and give their approval. H was the proudest of them all. “Marunong na magluto asawa ko!” (My wife now knows how to cook!”) Uh… I wanted to tell him about all the other dishes I’ve cooked in the past but realized that apparently, his standard for me knowing how to cook was cooking a good Sinigang. Hahaha!

    Bea and Simon’s favourite filipino dish is SINIGANG. As in they loooovvveee it! I love it too. Whenever I come home for a visit, my bilin to my Mom is NO MEAT pls — just seafoods! haha

    i love sinigang kaya i had to learn how to cook it…specially now na nasa abroad ako, atleast pag nangasim ako i can eat my fave food.

    in my case, when i go to manila, normally i go and request almost always, kinilaw na mangga…you know this binabad sa vinegar and other stuff thing.

    I LOVE pork sinigang! I especially love it when my mom cooks it (though I can cook it as well with the help of the mix)! i love it extra sour. i also put patis with sili on each spoonful i shove in my mouth (i know, not healthy, but oh well!).

    damn..so hungry right now! i read your blog right after batjay’s and you both talked about food!

    Ang sarap naman. Mahilig din kami ni hubby sa sinigang.
    What I do with our sinigang, I mashed the boiled gabi to make the sabaw a little bit flavorful. grabe parang gusto ko mag luto nyan tonight but Im scheduled to prepare tinolang manok, hmmmm sa Sunday na lang cguro 😀

    Am happy for you, Toni. Lahat na yata ng masasarap na ulam at dessert ay alam mong ihanda na talagang sobra ang sarap! Kainggit ka! Mamarazzi does not know how to cook but she is an excellent food taster.

    sinigang ang all time fave kong ulam, gusto ko yung sobrang asim! kakagutom haha! lalo na sa bundok, fave namin ito, sarap ng mainit na sabaw pampawi ng pagod :)

    Hi toni! Reading the comments here,everybody loves sinigang,ako rin! My hubby learned how to cook it when I gave birth to my eldest kid and was confined in the hospital.HE made it for me! cos he knows i love it..ah,LOVE..
    and hey,he cooks it without the ready made mix,juz lemon,salt and pepper,pero masarap!

    Hey toni. Love your blog. And I love your Sinigang recipe. Personally though, my comfort food is good ol’ fashioned Monggo… ideally on a Friday. :-)
