Mommy’s Tinitim

TINITIM. Click to enlarge. My mother-in-law is a fantastic cook. She can whip up an elaborate dish in five minutes and even the simplest dishes turn out tasting out of this world. What’s wonderful about her style of cooking is that she cracks jokes, tells stories, gestures wildly with her hands. Before you know it, the food is cooked! Her Tinitim is one of my favorite dishes.

What she puts in:

spring onion

shrimp

ground pork

2 eggs

1 cup water

* Mommy doesn’t measure ingredients, she just throws things in randomly. I’m guessing the shrimp and ground pork is around 1/4 kilo each.

What she does:

Separate the green and white part of the onion. Saute the “whites” till brown. Add in shrimp and ground pork, saute. Sprinkle a little soy sauce. When cooked, transfer the saute into a bowl. Pour 2 beaten eggs into the bowl. Add salt and pepper to taste. Pour in 1 cup of water. Just remember that 2 eggs is to 1 cup of water. Sprinkle with the greens of the onion. Place the bowl in a big saucepan. Pour water around the bowl. Cook for 30 minutes. Don’t cover! When cooked, carefully lift the serving bowl out of the pan. Serve hot in little bowls. Perfect with rice.

That’s it. Of course you can use other cookware for this. What Mommy uses is her trusty kawali and a very durable serving bowl. You can use a steamer or your rice cooker. You can even try baking it instead of steaming it. Be creative!
