Colors and Chicken for the Weekend

I’m looking forward to the weekend because of my new toy:

Come to Mama! I’ve had this baby since January, but had it repaired and now I have a brand new one! Yipee. I’ve taken some shots this morning, but they didn’t come out too nicely. Ah, the birthing pains with my new Lomo. I’ve bought several rolls of film and can’t wait to start shooting tomorrow!

In other news, I leave you with the recipe for Roasted Herb and Garlic Chicken recipe. It made a terrific Sunday lunch meal at my folks’ last weekend, so I’m sure it’ll bring much cheer to your Sunday lunch too. Enjoy!

Roasted Herb and Garlic Chicken

Ingredients:

1 whole chicken (about 1 kilo)

1/2 T tarragon

1/2 T oregano

1/2 T rosemary

1/2 T crushed peppercorn

1/2 T cayenne pepper

2 T Knorr Liquid Seasoning

2-3 heads of garlic, crushed

2 T salt

2 T olive oil

Potatoes, quartered

Tomatoes, halved

Easy procedure:

1. Combine the herbs, crushed peppercorn, garlic, salt, oil and Knorr Liquid seasoning in a bowl. Blend well.

2. Rub the herb/garlic mix all over your chicken. Think of it as your chicken getting a massage from you!

3. Let it sit for a few minutes. While your bird’s seeping in the mix, you can go and quarter the potatoes and halve the tomatoes. Sprinkle cayenne pepper over your potatoes.

4. Now wrap your bird in aluminom foil. Place it in a baking pan. Put in the potatoes and tomatoes.

5. In a 350 degree oven, let your bird sit for about 40-60 minutes. Be sure to check every once in awhile that it’s not burning!

6. After an hour’s roasting, take ’em outta the oven and ta-da! All done! Serve with gravy on the side.

What I did differently:

1. I used a turbo broiler instead of the oven. Same thing!

2. I didn’t wrap my bird in foil. I wanted all the drippings to go to the bottom of the dish, so there would be more for gravy. I WAS WRONG! My chicken tasted wonderfully like the way roasted chicken should taste like, but I missed out on the herb and garlic taste — the whole point of the marinade! Next time, I will wrap the chicken in tin foil.

It was a hit with my husby. He even asked me if we could buy a turbo broiler. Hmmm. The moral of the story? Another expensive one: Get a turbo broiler! Time to update my wish list! Happy weekend!
